Friday’s Frugal Food – Chocolate Coconut “Scones”

Today’s recipe is definitely not a healthy one, but it’s a tasty one!  YUM, I’m craving chocolate….

Chocolate Coconut Scones

1 Tbsp butter

2 Tbsp cocoa

4-6 Tbsp sugar (or even more if you don’t like a “dark” chocolate flavor…this is really up to you)

2 Tbsp milk

1/2 cup flaked sweetened coconut

1 recipe of breadtwists dough

1 Tbsp canola or olive oil

Make the dough for the breadtwists.  In a large skillet, heat oil over medium heat.  (If your olive oil isn’t extra virgin, you can  use it (I have), but for the best flavor results, use canola.)  While it’s heating, divide dough into 2-inch balls.  Flatten the balls, one at a time, into discs and put into the hot oil.  Fry for about 30 seconds on each side until golden brown.  Repeat with the remaining dough.  Place “scones” on a paper towel to drain.

While cooking the dough, grab a small sauce pan, put it over medium-low heat, and add the butter, sugar, cocoa and milk.  At this time you can also preheat your oven’s broiler.  Stir the chocolate sauce gently and allow it to cook to boiling, stirring often.  If it’s too thick, add more milk a teaspoon at a time to get the consistency you desire.  Allow it to boil a minute or two, then remove from heat.

Now get your coconut and spread it onto a baking sheet.  Toast it by broiling for a couple of minutes, stirring every 20-30 seconds or so.  Watch this closely, as it will burn quickly!

To assemble the scones, put a scone on a plate, drizzle chocolate sauce over it, and top with toasted coconut.  Oh, and call me when you get back from heaven…:-)
